Overnight Oats
I've doubled up the recipe I was given to make a week's worth of overnight oats. This has completely replaced the ultra processed cereals I was buying and mixing from the supermarket. I get six big portions from this because I'm greedy. Others might get twelve!
- 300g oats (traditional old fashioned oats rather than steel cut variety)
- 2 grated apples
- 100g flaxseed
- 100g assorted nuts and/or mixed seeds
- 16 pecan halves crushed
- 100g sultanas or raisins
- 4 teaspoons Cinnamon
- 8 tablespoons of natural yoghurt
- 250 mL of milk
- 6 tablespoons of frozen berries
You can't really go wrong with overnight oats. Just mix everything up well and finish by adding enough milk so that it can soak into the oats. Then leave in the fridge. Add extra yoghurt and/or milk to your serving to taste.
